3 1/2 Tablespoons salt
Wash, remove outer leaves and cut cabbage very fine. Mix well with salt. Pack firmly into sterile quart jars. Fill jars with cold water. Turn jars to remove any bubbles in jars and to make sure water is at the bottom. Wipe rim. Put on sterile lids and rings tightly.
Kraut will ferment in 4 or 5 days. When fermentation is completed, wash jars, tighten bands and store in dark cool place. Do Not Process.
Wait 6 to 8 weeks to use.
